Pork Ribs with Fresh Tomatoes


Ingredients:

1 lb pork ribs
2 big ripe tomatoes, diced
1 clove garlic, minced
1/2 onion, chopped
1/2 cup water
salt and pepper
oil


Procedure:

1. Cut ribs into rib-pieces and season it with salt and pepper.
2. In a pan, heat oil and fry ribs. Brown all side but do not overcook it. When done, remove ribs and set aside.
3. Using the same pan, saute garlic and onion and add diced tomatoes. Add fried ribs and pour in water.
4. Let it simmer for 1 hour, making sure to taste the sauce and add more seasoning if necessary.
5. Remove from heat when sauce sets thickly.
6. Serve.
