Chocolate Orange Cupcakes


Ingredients:

CupCake
1 Pack Chocolate Cake Mix
1/2 cup vegetable oil
3 eggs
1 cup chocolate chips
1 cup candied orange peel
1 1/3 cup orange juice
1 tablespoon flour

Frosting
1 can or 16 oz lemon flavored frosting
4 oz candied orange peel

Direction:
1. Preheat oven to 350F and line cupcake pan with cupcake liners.
2. In a plate, mix chocolate chips and candied orange peel and add 1 tablespoon flour. Mix well. The flour helps the chips and orange from going down once added to the mixture. Set aside.
3. In a big bowl, mix chocolate cake mix, eggs, oil and orange juice using mixer or by hand. Mix well. Add chips and orange mixture and mix again using spoon or spatula.
4. Fill cupcake liners, about 3/4 full and bake for 25-30 minutes.
5. Once cooked, remove from oven and let it cool for 20 minutes and then add frosting on top.

To make the frosting, just add orange peel to the premade frosting and mix well.
