Filipino Chicken Empanada Recipe


Ingredients:

1 lb chicken breasts, cooked and cut into small cubes.
1 cup raisins
1 cup green peas
1 medium size potato, cut into cubes
1 medium size carrot, cut into cubes
1 can cream of asparagus or cream of celery
1/2 medium size onion, mince
4 cloves garlic, mince
salt and pepper to taste
3 tablespoon oil
2 tablespoon butter
1/2 cup water
1 egg


 
Procedure:

1.Preheat oven to 400F.
2 In a wok, heat oil and butter and saute onion and garlic for 4 minutes. Add chicken cubes, fry until it becomes brown.
3. Pour in water and add carrots and potato into the chicken mixture. Season with pepper and salt and let it simmer for 10 minutes or until carrots and potato are cooked. Add cream, peas and raisins. Mix well. and remove from heat and set aside.

5. Place 1-2 tablespoon of fillings into the center of the dough and fold one side until it reaches the other side of the dough and seal it by folding the edges and pressing it with fork. Brush edges with egg white for additional seal.
6. Place empanadas in a baking sheet and brush it with egg yolk for golden brown result.
7. Bake for 20-23 minutes.
